In my grandmother's kitchen, the stove was taller than I was.

I stood on my toes,

my chin on the edge, and watched the pot.

The dumplings sank first.

Then, one by one, they came up to the top,

fat and white, rolling in the steam.

Grandma added cold water three times.

I never understood why.

She just said, "That's how it's done."

Then she lifted one out with her long chopsticks.

The first one was always mine.

"Careful, it's hot," she said.

Every time.

Then she blew on it herself,

three slow breaths, and put it in my mouth.

It was still too hot.

I ate it anyway.

I've had dumplings in many restaurants since.

Some were excellent.

None of them were blown on first.
