Seasoning is where a dish really comes alive. 调料一放,一道菜才算真正有了灵魂。
I add a pinch of salt to start — 我先放一小撮盐打个底——

I sprinkle in some pepper, 撒上点胡椒粉,
then drizzle a little soy sauce around the edge of the pan so it caramelizes as it hits the heat. 再沿着锅边淋一圈酱油,让它受热激出焦香味。
I give everything a good stir and grab a clean spoon to taste as I go. 好好翻炒均匀,拿个干净勺子边做边尝尝味道。
Hmm — it needs a touch more salt, 嗯——还得再补点盐,
and maybe a squeeze of lemon to brighten it up. 或许再挤点柠檬汁提提鲜。
I add them bit by bit, tasting again after each one. 我一点点地加,每放一次就再尝一口。

I turn off the heat, happy with how it came together. 关火,对最后做出来的味道相当满意。
